While I'm on the topic of #Cooking #curry and technique* - I'll point out that (very) broadly the diff between Indian and Thai curries is the use of onions in the initial base layer. (No, not all curries obv)
But you can start with onion paste, brown and then add a Thai curry paste and continue and it will taste more akin to an Indian curry.
