Things that are very easy to to with the VERA graphics chip, that are hard to do on the C64:
• Parallax scrolling
• Freely 4-way scrolling maps
• Sprite multiplexing (though with 128 hardware sprites you probably won't need to bother -- even so, you can do it)
• PCM sample playback
• Colour palette shenanigans a la VGA-era DOS games
• Software sprites (though why you'd want to I couldn't say)
