As I have it down from my shelves, looking at the fermented recipes, it is

I keep this great tome of Thai food in my bookcase in nostalgic memory of David's Darley St Thai in Sydney in the good old days. A take-away place only (maybe one small table was there), always with queues, the food was mind blowing. Can you believe that he first ended up in Thailand by mistake (see below)?
But the book does not have a lot of recipes that are vegetarian, so it is rarely off the shelves. Nevertheless, for Thai Food enthusiasts, it is a bible. He is a stickler for authenticity, and you won't find a better book. You can find it with various covers on different editions.
David subsequently ran restaurants in Sydney and London, then moved to Thailand and opened restaurants. These days he oversees restaurants around the world, including Long Chim Sydney (recently closed) and Perth, Aaharn in Hong Kong, Aksorn in Bangkok and Long Dtai in Koh Samui.
A blurb on David's dedication to Thai food:
"David Thompson first went to Thailand by mistake; a holiday plan had to be changed at the last minute, and he ended up in Bangkok, where he was seduced by the people, culture, and cuisine. Since that fateful trip some 20 years ago, Thailand has become David's second home. Working alongside cooks who perfected their craft in the Thai food places, he began to document the traditional recipes and culinary techniques that have been handed down from generation to generation.
The result is this volume, the most comprehensive account of this ancient and exotic cuisine ever published in English. Thompson writes about Thailand and its food with an easy erudition, encouraging readers to cook and experiment, while simultaneously fostering a respect for the food and its stewardship through the ages...."
