You're correct that plex/torrent server are totally simple to install/config.... and after thinking about it I probably advised you to overcomplicate things, which is what I do, so maybe just all in one.
What I'd do:
install/config nfs server on the host system, pointed at a massive USB disk. share nfs to torrent/plex vms. map drives to nfs from guests.
