Cooking without tasting is like painting without ever covering a previous stroke. No matter how talented you are, you won't be able to consistently achieve excellence without fine-tuning.
That said, Cooking is partly a creative process. If you lack natural talent, you can work your ass off and still won't get half as far as a talented cook that tries half as hard.
