I have mentioned this one before. It's a fabulous book, and love it even more as it has some purslane recipes.
And this mornings browse had me searching for a Greek recipe of slow cooked (oven) eggplant and chickpeas in a clay pot. She mentioned this in this book, and I found a recipe in #PaulaWolfert's The Cooking of the Eastern Mediterranean. I might try it after the Extreme Heat Wave this week. I need a cool day to be able to have the oven on.
