I did some tacos tonight.
My son doesn't like fish, but loves everything else that goes with fish tacos, so I made a compromise: deep fried chicken tenderloins.
I marinated them in buttermilk and jalapeño pickle juice, then made up a flour mix of chipotle, oregano, coriander powder, allspice, etc.
Turned out well, both kids loved it
