This is a great way to age animals harvested on the farm when you don’t have a walk in. Just be careful not to pack things in too tight. I stuffed two whole pork halves on top of each other and they didn’t cool down fast enough. I checked the temperature controller every day, but didn’t check the meat. That was a special smell, I can assure you.
