they are super fucking sticky, which makes removing the shells intact almost impossible unless they are dry all the way through, and the “rim” causes the shell to stick at the edge, so it spreads out instead of rising. i wasted half a pound of almond flour thinking i was doing something wrong and changing the temperature and baking modes
