Yeah, that's a tough one. I think if you get one set to the right sharpening angle for your knife, you're probably going to be okay. I would love to get one of those hand-sharpening jigs that allows you to set the angle and stone grit (may have to get one for the knife/chisel thing), but so far I've made do with a motorized sharpener.
