Bit of a snag with the mead - the water is full of Chloramine where I live. That shit kills yeast.
So I added Sodium Metabisulfite which breaks down Chloramine, but Sodium Metabisulfite also kills yeast, so I had to get the must up to a higher temperature to disperse it.
So now I'm trying to cool down the must in an ice bath so I can start the ferment.
Ah, the life of a mazer.
Oh and while I was fucking about with that, the fire under my brisket went out. Finishing that in the oven.
