Finished product.
I forgot to mention that it needs to sit for about a week before it’s really ready. You can use it immediately but the taste changes and gets better after it has sat for awhile. I don’t know if it is aging or coming together or what the mechanism is but has been true every time.

quoting note1574…wka8I don’t have a set recipe per say. Every batch is an experiment but I can tell you what I did this time.
- 5 Black Hungarian peppers
- 1 Habanero pepper
- 2 limes
- fresh garlic
- salt
- black pepper
- a dash of paprika
- white vinegar
I mix and match peppers for heat levels and flavor.
Put everything in a blender and purée until everything is smooth. Pour into a saucepan and bring to a boil then turn it down to simmer. Stir the entire time so it doesn’t scorch. I simmer it maybe 15 minutes to bring the flavors together and thicken up.
Let cool and bottle.
You can mix and match peppers, try different citrus, fruit, or herbs. Whatever flavors you want. You can also get creative with the peppers by fermenting, grilling, smoking, or searing them beforehand for a different flavor. The combinations are really endless. note14gl…djar
