I think it's difficult if you don't have mediteranean type sunshine. They take a few days of heat. So folks do something like in the oven but I imagine they aren't as good. We do an over grilled with garlic, salt and peper version (20 minutes), olive oil then into a sterilised hot jar. They are pretty fabulous and last all year. Not sun dried though...
