The benefit of gravel bikes over modern road bikes are: bigger tire clearance (smoother ride), more fender clearance & slightly relaxed geometry.

Gravel bikes will do it all, including some easier mountain bike trails. They still can go fast on pavement. They’ll carry you & your stuff, up to a full camping load.
