you can, there's many castles for sale across (esp. Southern) Europe ! and they're often not that expensive in sale price

however they're usually semi-ruins, maintenance to a castle is always expensive, and they tend to need lots and lots of work
and are generally strict regulations in place w.r.t. historical buildings, on how this should be done, and who should do it

unless you're super enthusiastic about a big project, it's probably a bad idea-it's a common trope that someone buys one and then runs out of savings and has to sell it again 😀
