It's kinda weird that all sorts of modern (often web based) tools don't support coloured text. So the best way to preserve coloured terminal output is a screenshot. Examples that come to mind: Mastodon, Slack, GitHub, Obsidian, Mattermost, Matrix.
Maybe I should make a pastebin that preserves formatting 🤔
