I think USians who are used to buying tomatoes at a big grocery would not notice the loss of flavor from refrigeration. Tomatoes for mass market have been bred to look good longer on display, and not get bruised so easily, at the expense of flavor. For anyone who has enjoyed heirloom varieties fresh, the loss of flavor from refrigeration is dramatic.
