Apple: You need an iPhone to pair an Apple Watch. Our protocol stack is historically grown and none of our engineers knows all sub-layers and fields, we couldn't even document it for third parties.

Google: Our Pixel Watch is only compatible with Android. No legacy here. We decided to use RFCOMM instead of BLE/GATT, as Apple's CoreBluetooth framework doesn't support it.
