Robert mentioned a quote with ancient provenance. The idea seems to have first appeared in Cicero, "serit arbores, quae alteri saeclo prosint," though he credited Caecilius Statius. But it was philosopher/theologian Elton Trueblood who said it in the manner I think you were referencing, "A man has made at least a start on discovering the meaning of human life when he plants shade trees under which he knows full well he will never sit."
