Okay, everything I read about #HomeAssistant Supervised tells me "don't do it". I mean, I know what I'm doing, in the sense that I know I can make it work, but the fact that Raspberry Pi OS is out of support, and having anything else installed is also considered out of support, makes me feel like any small issue could mean "sorry, you're on your own".
I think I'll try fiddling with HA OS a little bit more and see where it takes me.
