Unopened flower buds are edible and can be stir-fried or deep-fried.
The flower petals are edible too and can be used as a garnish. Once opened, the green base of the flower (bracts, receptacle, etc) are a little too bitter in my opinion so I just pull off the petals.
People make dandelion wine out of the flowers. My grandma used to make vinegar from them.
