I just tried to run Ultimate Doom builder in Bottles and it seems to work. Couldn't test if everything works as expected, but it seems to. It has the problems of a sandobx, but it may be a good solution for the trenchbroom issue too until there is better support.
I used the game config in bottles, not the Application one. Hope it helps.
