Lunch is a mini homemade pizza. I use the premade crusts at Aldi. This one is topped with fresh grape tomatoes, spinach, dehydrated basil (from my garden), finely-chopped walnuts, and Italian cheese blend.
To make it 100% vegan, you could substitute veggie cheese.
