The signing of the kind 0 event is a verified association of the domain and the npub. But the reverse verification from the internet resource is not available.
If the NIP-05 profile on a server was signed, it would allow reverse verification ("the owner of this npub created this profile") and verify that the relay data in the profile are correct.
For example, imagine we have a directory of thousands of NIP-05 profiles, and there are 200 "daniele", if the profile was signed it is trivial for the client to say: "this is the daniele you interacted with, and they use these relays".
This has been useful to think about, i hadn't really considered non-owner created NIP-05s to be useful, but i can see some cases where signing might impede discoverability.
