If I send you Bitcoin via lnbits, there's a record of that transaction that links my node node, to your node via a system that you had to authentic with. The transaction may be obfuscated, but it's still recorded and logged.
If I send you Bitcoin via ecash, there's no record of any Bitcoin transfer between you and me. The only transfers, were between mints. If you only connect to mints via Tor, there's nothing to link you to the payment.
You also don't need to create an account to use a mint. Because mints create bearer tokens only, there's no account system like in lnbits. A mint has no way of knowing how many people posses the tokens it's minted.
