After the soup is done and has sat for the minimum time, get a wider recipient, splash with olive oil, toss a thinly sliced garlic and some caramelized onion (you must either have it done prior to everything else, because it takes hours, or simply try to buy it premade), fresh thyme, and fry the mix.

Once the onion starts to become loose, toss the saffron. Then the potatoes. Stir fry for a while.

Don't overdo the saffron because it can overpower everything else and then what's the bloody point of spending three hours cooking with tens of ingredients.

Once everything is sticky again and before burning it, splash ranci and brandy. Again, just enough to melt the caramels and then evaporate the alcohol, don't go crazy or everything will taste like wine.
