Actually I've been watching Star Trek in internal chronological order for the past few months, combined with other shows (like the aforementioned Battle Star Galactica, which I watch like once a year, and others like Severance).
So, now I'm half way through S01 of the original series, after watching ST: Enterprise, and ST: Strange New Worlds (S01 and S02, leaving the rest for the very end).
One of the most interesting things is how the original series is a lot darker/serious than I remembered from my childhood when I first watched it, and how in contrast with the two modern ones, the crew of the Enterprise keep systematically dying in relatively huge numbers on every single episode!
Kirk and the others actually go through some serious moral dilemmas, and even if they're obviously "the good guys", they don't hesitate to wade into the "gray" zone quite often. I think the newer shows have lost some of that (even if I enjoy them a lot too).
