When and how did we get to the point that businesses had to find their niche and then dominate the market in that niche, gradually making it uneconomical for anyone to even attempt to compete with them?
We used to have whole streets of identical businesses. Tiny villages would have multiple greengrocers, not one (or zero). If you needed a special bolt that Joe's hardware store didn't stock, Joe would send you to Frank's hardware store three doors down. What killed that?
