Android 15 changed how keyboard layout works and keyboards need to update how they handle insets to be compatible with it. We updated our fork of AOSP Keyboard to be compatible. Please try that first. If you're having issues with other apps. they likely weren't updated. Try HeliBoard and FlorisBoard as other open source options. HeliBoard is an overhauled AOSP Keyboard closer to Gboard features.
