I thinned the beetroot patch by about half, which yielded around 16 individual plants. Some plants had decent sized roots, and others didn't, and still others had started bolting towards flowering.

I just finished trimming, washing, and chopping the greens (many of which are purples), and my left hand feels like it might fall off at any moment. In total, I ended up with 2.95kg of green & purple beetroot not-roots.
