There's no reason to buy pancake mix when it's so easy to make them from scratch:
3/4 cup all purpose flour
1.5 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
1 egg
1/4 teaspoon vanilla or not, you do you

Note:
1) If you want to encourage browning, add a 1/4 tsp of baking soda
2) Apologies for the freedom units. This isn't baking, just convert and round.
