Turns out that macOS does not like my ultrawide Asus monitor that I have plugged into my Thunderbolt 3 dock. It scales very poorly at 1080p. According to some people, it's a cable issue (I'm using an HDMI to mini-DisplayPort abomination because it was long enough to run through my wall) because MacBooks are finicky. So I ordered a high-quality USB-C to DisplayPort marketed for MacBooks, so we'll see. Just means that I have to rerun cabling through my wall, which doesn't thrill me much.
