The main concern about not harming is the wound caused by the drilling. But if performed correctly on a thick enough healthy tree, it shouldn't be a problem. The tree can heal itself from the wound. It of course always makes sense to observe, listen to the tree and consider if it is right to tap or not, before hurrying with piercing a hole.
A less invasive way is cutting a branch of the tree and harvesting directly the drops coming from the fresh cut. The yield is though lower.
