The Ki key in your sim card is your password. And you can't get it out because you're not allowed to.

It's not even close to the same infrastructure. The way cellular carriers operate today is much closer to what I describe in the OP than to phones from 1923. There is no operator, no circuit boards, no switches, nothing like that. When you make a call, your voice is split into network packets and routed just the same way as when you make a call over FaceTime or Matrix or what have you. The only difference is, you can easily run your own Matrix server.
