I haven't bothered with lemon juice, not sure I want that flavour element. There's over 2.5% salt by weight in this so it should be safe. It'll now "ferment" in some way to some extent, and I'll add oil in a few days. I'll probably package to smaller jars and might pasteurise after adding the oil.
