After dinner a final job for the day... wringing 165g (35% of weight) of moisture out of the chopped & salted green chillies, then adding garlic and a spice mix based on this:

There's over 2.5% salt by weight in this so it should be safe. It'll now "ferment" in some way to some extent, and I'll add oil in a few days. I'll probably package to smaller jars and might pasteurise after adding the oil.
