I have a similar thermostat and desire for offline functionality. I make Home assistant compute an average based on the rooms I care about and then compute an offset between the average and the local sensor in the thermostat. The thermostat copies the offset and if HA or wifi ever goes down, it will use the local sensor with whatever the last offset was.
