P-52 is specifically the oldest NT fragment (of John). For OT there are various fragments of text that ended up in what became the BuyBull, such as the Ketef Hinnom Scrolls (mezuzahs/amulets for protecting the dead), but there is no archaeological evidence whatsoever of a people observing Torah laws or self-identifying as Jews until about 150 BCE at the earliest. At best you have various Pagan Canaanite groups with proto-Jewish myths, but whose actual religious practices directly transgress what is now considered Torah law. The oldest extant copy of the complete OT is written in Greek and dates to the 3rd century CE (Codex Vaticanus, of the four great uncials). That's also the earliest physical evidence for the Tanakh/Pentateuch as a whole. About 1/3 of the OT is contained in the Dead Sea Scrolls (~2nd century BCE), however plenty of those have also since been demonstrated to be forgeries. The oldest extant complete Hebrew copy of OT is Codex Leningradensis from about 1000 CE. The majority of dating and authenticity of these texts is based on conjecture related to writing style and so forth (mostly wishful thinking), rather than an authentic text that survives from the era being claimed. In fact the vast majority of Christian literature is widely known to be pseudepigrapha (fraudulently attributed) rather than authored by the people claimed as such. There's no independent corroboration, nor material evidence of Christinanity existing, much less of a magical Jewish Übermensch named Jesus, until centuries after the supposed year zero.
