I run my own GitLab instance on a simple VPS that is independent from other machines. This way, despite running it myself, there isn't really any bootstrapping involved.
I'm currently working on moving it locally, but it'll still be a small separate machine, that runs independent from the rest of the home infrastructure.
Just like you do core services good old infrastructure land :)
