The amount of bitcoin present is a finite one over which no authority has control whilst the amount of printed money (aka. fiat) can and is increased by authorities all over the world. That's why prices go up: The money looses value. When measuring the value of Bitcoin we create the impression that Bitcoin is unstable where if we would measure the value of Fiat in Bitcoin one would realize that Bitcoin is the stable factor in this game.
