I'm somewhat disappointed in the freeze-dried raspberry powder. Tried making a ganache with it. Flavor was mild, no way to get the intensity I seek. Maybe it'll grow on me. Or maybe I'll abandon the project and stick with spices as flavorings.
From my juicing experiments last year I know raspberries contain a lot of pectin. The freeze-dried stuff seems to as well. I started by whisking together equal parts raspberry powder and cream, and the result was extremely thick. Could probably use this stuff as a whipped cream stabilizer, which might be a better use anyway (and quite tasty).
