Holding bitcoin is literally remembering 12 words. Or forgetting 12 words and storing them in secure places.
If you are worried about security study multi sig. store parts of your 12 words in different geographical locations. Use pass phrases and multiple accounts makes it virtually impossible for anyone to even know how much bitcoin you could have in different accounts.
In theory the only way to know would be if they had record of your kyc'd bitcoin and or internet activity and access to your wallets.
Even then its be difficult to know what is yours and impossible to know or prove you haven't lost the 12 words (access to your bitcoin).
Though it's of course still possible to have your bitcoin seized or stolen, you can still of course be threatened, attacked or thrown in jail. There is no other asset or money on earth that can match bitcoins security.
