it depends what your use case is. I ran BTCPayserver for over 3 years. Its a great project, love the team. Its better for enterprise use, with that big stack of docker containers. I gravitated towards LNbits as very light and quick to build - sub <5 min end to end and more focused on small payments, increasingly so as the price of btc went up over the years. try both, after v1 LNbits comes out you might find it quite nice.
