That's where the lnproxy bit is important. Try it yourself:
- make a blinded bolt11 invoices from your lnd, zeuz, or blixt node
- go to https://lnproxy.org and paste it in
- get a standard (unblinded) bolt11 invoice any wallet can pay

since the payment hash is the same on both invoices you can be certain that the lnproxy relay will have to forward the funds to you but it can't learn about your node because your invoice was blinded.
