Attempting a Basque Cheesecake today. It's baked for a bit over the requisite time, and still seems very wobbly. But the recipe says to rest in the oven (off) with the door open for 10 mins and then allow to "set" at room temperature for 4 hours, so I guess that's what I'll be doing.
If it doesn't set, I have no backup plan for this arvo's gathering.
