The 'plate/wrinkle test' for pectin; pop a saucer in the freezer when you add the sugar to your marmalade, after 10 minutes of rolling boil spoon a small amount onto the cold plate and return it to the freezer. After 1minute push from the edge with a spoon, if it is watery and the surface does not wrinkle continue boiling for another 10 minutes. Repeat this until you observe a strong wrinkle like above and your marmalade will be perfectly set once cooled. The time this takes can vary from batch to batch (unless you have added powdered pectin), just keep going - it will happen! Do not rely on a thermometer if you are not seeing the wrinkle, it is a good guideline for when to start testing (5mins at 105c) but is not foolproof.
This year's Seville oranges are amazing and have actually set more strongly than I prefer so the next batch will have a slightly shorter boiling time
