The onion relays are just like the normal relays, as long as you know the url you'll be able to fetch events and count the pubkeys there as well.
This "problem" goes for the number of followers you have too, which is something I think many new nostr users will have a hard time with understanding. There is nothing stopping me from creating 10k nostr users that all follow only you. The follower number doesn't mean anything when the cost of creating an account is very close to zero.
