For today's Brisket/Bacon smoking, I went with lump charcoal instead of briquettes. The temperature control with lump charcoal is *insane*. Once the smoker was at temperature, I have yet to need to fiddle with the intake air, and it has reliably been within 210-230 F (100-110 C) for the entire time.
I don't think I am going back to briquettes.
