Sometimes stores have big discounts on meat that's about to expire soon, then I'll buy that and just cut off the fatty bits myself, turn it into thin slices, and have super cheap beef jerky for the rest of the week.
As for the kind of animal, so far everything seems to work, beef is obviously the standard, but you can use deer, buffalo, even chicken (though that one was my least favorite).
