We were discussing oven spring earlier which got me rethinking how I do things, especially in the critical loaf to oven period.
So I came up with a theory and a technique modification to test it. And used it on the second loaf.
Boing!!
The right hand loaf is 150g larger but that does not account for all of the difference in size. The proof is that *beautiful* end-to-end crack in the right hand loaf. That's real spring!
