Shield is your friend, but learn to dodgeroll as well. Roll into attacks (diagonally past enemies) as well and try to get behind. Remember that you can also do a heavy counter attack after each shield block (press R2 after block) which is super useful.
Take your time and have fun. Bosses are very beatable but can take time to learn.
